Hot and Sour soup:
Ingredients:
2 cups water
1 tbsp vinegar
½ tbsp soy sauce
1 tbsp green chilli sauce OR 4 green chillies, finely chopped
1 tbsp corn starch mixed with 3 tbsp water
1 cupful grated carrots, cabbage, and slightly smashed sweet corn
½ tbsp coriander, finely chopped
½ tbsp spring onions, finely chopped
boiled noodles (as much as you want to add)
salt and sugar to taste
In 2 cups of water, add the green chilli sauce, vinegar, soy sauce, salt and a little sugar to taste and bring it to a boil. Then add the grated carrots, cabbage and corn. Boil it for additional 5-10’. Add the corn starch paste to the boiling mixture to thicken it a little. Toss in the boiled noodles. Cook for ~2’. Garnish it with coriander and spring onions.
Serve hot!
Chilli Paneer:
Ingredients:
peanut oil (for frying paneer cubes)
1 tbsp soy sauce
1 tbsp green chilli sauce OR 4 green chillies, finely chopped
1 tbsp corn starch mixed with 3 tbsp water
200 gm paneer, diced into small cubes
½” ginger, grated
2 cloves garlic, grated
a green bell pepper, chopped into big pieces
a medium sized red onion, chopped into big pieces
½ tbsp spring onions, finely chopped
salt and pepper to taste
Fry the diced paneer till it turns golden brown on all sides and set aside to soak in a bowl of warm water.
Heat ~1 tbsp oil in a pan on medium heat. Add in the crushed ginger/garlic/green chilli paste and sauté for 2’. Add in the diced onions and green pepper and sauté for ~3’, till they look half cooked. Add paneer pieces, salt, pepper, and soy sauce and cook for ~1’. Add a splash of water and allow it to come to a boil. Add in the corn starch mixture and stir till sauce thickens, adding more water if necessary. Cover cook for ~2-3’ to allow paneer to soak in all the flavors. Garnish with chopped spring onions.
Hakka Noodles:
Ingredients:
2 tbsp peanut oil
1 tbsp soy sauce
1 tbsp green chilli sauce OR 4 green chillies, finely chopped
½ packet boiled noodles
2 cloves garlic, grated
2 dry red chillies, broken into pieces
½ teacup shredded cabbage
1 green bell pepper, finely sliced
2-3 spring onions, finely sliced
Salt to taste
Heat the oil in a wok or frying pan on a high flame. Add the garlic and red chillies and stir fry over a high flame/heat setting for a few seconds. Add in the cabbage, capsicum, spring onions and soy sauce and stir-fry on a high flame/ heat setting for 2’. Add in the noodles, chili sauce and salt. Mix well and cook for 1’.
